Recipe of the Month
Twice Baked Potato Casserole
3 lbs of plain, prepared mashed potato (fridge section of supermarket)
4 oz Cream Cheese
4 oz Sour Cream
1 stick unsalted Butter
¼ cup half and half
Salt and pepper
2 cups Sharp Cheddar
10 slices of bacon, fried crispy and finely chopped
1 bunch green onions, finely chopped
Heat potatoes in microwave until thoroughly heated. Place in a large bowl. Add half of bacon, onions and cheese. Add remaining ingredients. Mix well and place in a greased casserole dish. Add remaining bacon and cheese.
Bake @ 400 for 30 – 40 min. Remove from oven and sprinkle with remaining green onions. ENJOY !!!!!!
